‘Sōmen’ is a type of noodle made of wheat flour, which is served cold in the summer. Normally, the noodles are white, but in Matsuyama, five-coloured noodles have been eaten since the Edo period. They’re coloured with natural ingredients – yellow egg, green tea, brown soba, and red plum. They’re very attractive to look at, so they make a welcome gift. The noodles are dipped in soy or mirin-based sauce, with ginger and other condiments.
