“Goshiki somen” is one of the specialties of Matsuyama that has been eaten since the Edo period. The five colors of somen as brown, green, red, yellow and white, which are made by kneading glutinous barley, matcha green tea, ume(Japanese apricot), and mandarin orange, are beautiful to look at and are appreciated as gifts.
