A whole sea bream is cooked with kelp on a bed of rice in an earthenware pot. The rice is infused with the flavours of the sea bream, kelp and savoury soy sauce, making a very rich meal. Other ingredients include carrot and Matsuyama’s local specialty, deep-fried tofu. In the Hōjō district of Matsuyama, you can eat sea bream rice that only uses fish and nothing else. In the area south of Matsuyama, sea bream rice uses slices of sea bream sashimi on rice. Both styles are delicious.
