Along with soba and ramen, udon is one of Japan’s most popular noodles. The udon of Kagawa Prefecture is known as ‘Sanunki udon’. It’s known for its firm, al-dente texture. The broth in which it’s served is also notable for its quality, and Kagawa Prefecture is a major producer of the fish from which it’s made. There are over 700 udon shops in the prefecture, and on holidays people visit from all over Japan to eat udon.
